Steel Cut Oats Plus

1/2 cup steel cut oats
1/3 cup barley
1/4 cup Red River Cereal
1/4 cup mixed flakes (rye, quinoa, kamut, oat)
1/8 cup quinoa
1/8 cup oat bran
4 cups water
Pinch of salt

Put all ingredients in a slow cooker and cook on low for 6 hrs. or overnight. Top with dried fruit, low sugar jam, honey or maple syrup (1 tbsp. maximum). Serving size 1 cup.

Chocolate Chip Baked Oatmeal

1/2 cup steel cut oat plus
1/4 cup oats or oat bran or mixed flakes
1/4 cup natural unsweetened applesauce, pumpkin, or mashed banana
1 tbsp. 70% or more organic chocolate, chopped
1 tbsp. maple syrup or honey
1 egg
2 tbsp. milk
1/8 tsp. vanilla
1/8 tsp. salt
Pinch of nutmeg

Mix all ingredients in a bowl until well blended and steel cut oats are no longer lumpy. Spray a 1 cup ramekin with cooking spray and fill with mixture. Bake at 375F for 25 min. or until top is browned.

Apple Cranberry option: Use 1/4 cup applesauce or cranberry sauce, 1/2 tsp. cinnamon and replace 1 tbsp. chocolate chips with 1 tbsp. dried cranberries and 1 tbsp. chopped apple.
Cinnamon Roll option: Add 3/4 tsp. cinnamon, and top with 1 tbsp. powdered sugar mixed with 1 tsp. butter, a drop of vanilla and enough milk to make it spreading consistency.
